Wild boar ribs are slow-cooked on the BBQ and basted with a rich, tangy BBQ sauce. The meat is tender and full of deep, smoky flavors.
Ingredients
- 2 Racks Wild Boar Ribs
- 1/4 Cup Apple Cider Vinegar
- 1/4 Cup Brown Sugar
- 1/4 Cup Tomato Paste
- 1/4 Cup Worcestershire Sauce
- 2 Tbsp Honey
- 2 Tsp Smoked Paprika
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
Directions
Preparation
Remove the membrane from the back of the ribs.
Pre-cooking
- Wrap the ribs in aluminum foil and place them on the grill over indirect heat. Cook for 1.5 to 2 hours until the meat is tender.
In a small bowl, mix salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the ribs.
BBQ Sauce Preparation
In a saucepan, combine apple cider vinegar, brown sugar, tomato paste, Worcestershire sauce, honey, and a pinch of salt.
Simmer on low heat for 10 Minutes until thickened.
Grilling and Basting
Remove the ribs from the foil and place them directly on the grill.
Baste with the BBQ sauce and grill for an additional 15-20 Minutes, turning and basting frequently.
Serving
- Slice the ribs and serve with extra sauce on the side.

Pair these wild boar ribs with a robust red wine such as Cabernet Sauvignon or Tempranillo. The bold, tannic structure of these wines complements the smoky, gamey flavors of the ribs.
