- 1 (8-10 Lb) Beef Brisket
- 3 Tablespoons Kosher Salt
- 2 Tablespoons Black Pepper
- 2 Tablespoons Smoked Paprika
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Tablespoon Brown Sugar
- 1 Teaspoon Cayenne Pepper
- 1 Teaspoon Mustard Powder
- 2 Cups Bbq Sauce (Chef'S Choice)
- 1/4 Cup Apple Cider Vinegar
- 1/4 Cup Worcestershire Sauce

Preparation
Trim any excess fat from the brisket, leaving about 1/4 inch to help keep the meat moist during grilling.
In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper, and mustard powder to create the spice rub.
Season the Brisket
Generously coat the brisket with the spice rub, pressing it into the meat to ensure even coverage.
Wrap the brisket in plastic wrap and let it marinate in the refrigerator for at least 4 hours, preferably overnight.
Grilling
Preheat your BBQ grill to 225°F (110°C) for indirect grilling.
Place the brisket on the grill, fat side up, on the cooler side of the grill away from direct heat.
Close the lid and cook for about 5-6 hours, or until the internal temperature reaches 160°F (70°C).
During the grilling process, combine the BBQ sauce, apple cider vinegar, and Worcestershire sauce in a bowl.
Use this mixture to baste the brisket every hour.
Wrapping and Cooking
Once the brisket reaches 160°F, wrap it tightly in aluminum foil or butcher paper to lock in moisture.
Continue cooking the wrapped brisket on the grill until the internal temperature reaches 200-205°F (93-96°C). This will take an additional 2-3 hours.
Resting and Serving
Remove the brisket from the grill and let it rest, still wrapped, for at least 1 hour.
Unwrap the brisket and slice it against the grain into 1/4-inch thick slices.
Serve with your favorite sides and extra BBQ sauce on the side for dipping.
